Delicious Stuffed Potato Pancakes

"Very yummy potato pancakes with ground beef inside. So good! You can change it up the way you like. Serve with sour cream. These are even good next day! "


Original Recipe Yield 6 servings



8 potatoes, peeled and grated

1/4 cup all-purpose flour

1/2 teaspoon baking powder

3 eggs

salt and black pepper to taste


250g ground beef

1/2 onion, grated

1 pinch garlic salt

1 egg

1/4 cup bread crumbs

2 teaspoons vegetable oil



Mix together the potatoes, flour, baking powder, 3 eggs, and salt and pepper in a bowl. In another bowl, mix the ground beef, onion, garlic salt, 1 egg, and bread crumbs until well-combined.

Heat the oil in a pan over medium-low heat, and drop a rounded tablespoon of potato mixture into the hot skillet. Spread and flatten the pancake out a little, and place about 2 teaspoons of beef mixture on the pancake, spreading the filling out almost to the edges of the pancake. Drop another rounded tablespoon of potato mixture on top of the beef, and spread it out to completely cover the beef. Fry until the bottom of the pancake is golden brown, about 5 minutes, then flip and fry the other side until golden, 1 to 2 more minutes.

Blue Ribbon Chili

  "This is the tastiest, easiest chili recipe you'll ever find. I recommend serving it with sliced jalapeno chile peppers and crackers or bread chunks."


Original Recipe Yield 6 to 8 servings



1kg ground beef

1/2 onion, chopped

1 teaspoon ground black pepper

1/2 teaspoon garlic salt

2 1/2 cups tomato sauce

1  jar salsa

4 tablespoons chili seasoning mix

1 can light red kidney beans

1 can dark red kidney beans



In a large saucepan over medium heat, combine the ground beef and the onion and saute for 10 minutes, or until meat is browned and onion is tender. Drain grease, if desired.

Add the ground black pepper, garlic salt, tomato sauce, salsa, chili seasoning mix and kidney beans. Mix well, reduce heat to low and simmer for at least an hour.

Slow Cooker Salisbury Steak 

"This recipe goes together quickly and does not need a lot of time in the slow cooker. It's a delicious way to add flavor to ground beef and the children love it! The gravy is delightful served over mashed potatoes."


Original Recipe Yield 8 servings



2 pounds lean ground beef

1 envelope brown onion soup mix

1/2 cup Italian seasoned bread crumbs

1/4 cup milk

1/4 cup all-purpose flour

2 tablespoons vegetable oil

2 cans condensed cream of chicken soup

1 packet dry au jus mix

3/4 cup water



In a large bowl, mix together the ground beef, onion soup mix, bread crumbs, and milk using your hands. Shape into 8 patties.

Heat the oil in a large skillet over medium-high heat. Dredge the patties in flour just to coat, and quickly brown on both sides in the hot skillet. Place browned patties into the slow cooker stacking alternately like a pyramid. In a medium bowl, mix together the cream of chicken soup, au jus mix, and water. Pour over the meat. Cook on the Low setting for 4 or 5 hours, until ground beef is well done.

Mini Meatball Subs 

"These are great for entertaining ....a meatball with sauce and mozzarella cheese between a little roll."


Original Recipe Yield 8 mini subs



500g ground beef

1/2 cup chopped onion

1/2 cup chopped green pepper

1/2 cup crushed butter-flavored crackers

1 egg

1 teaspoon Worcestershire sauce

1 teaspoon chopped garlic

1 teaspoon seasoned salt

1 teaspoon ground black pepper

1 can pasta sauce

1/2 cup shredded mozzarella cheese

1/3 cup grated Parmesan cheese

8 coctail rolls, split



Preheat an oven to 180 degrees C.

Combine ground beef, onion, green pepper, crackers, and egg in a large bowl. Season with Worcestershire sauce, garlic, seasoned salt, and pepper; mix well. Form mixture into 8 meatballs. Place meatballs in a 9x13 inch baking dish.

Bake meatballs in the preheated oven for 20 minutes. Pour the pasta sauce into a large saucepan; bring to a simmer over low heat. Stir baked meatballs into the simmering sauce. Do not turn oven off. Simmer sauce until meatballs are fully cooked, about 20 minutes.

Place one meatball, a sprinkle of mozzarella, a sprinkle of Parmesan, and a bit of sauce between each roll. Place sandwiches in hot oven; bake until cheeses melt, about 7 minutes.

2 tablespoons olive oil

500g ground beef

250g chorizo sausage, chopped

1 large onion, chopped

1/2 cup chopped red bell pepper

2 cloves garlic, chopped

1 tablespoon ground cumin

2 teaspoons chili powder

1 teaspoon dried oregano

1 teaspoon paprika

1/4 teaspoon cayenne pepper

1/4 teaspoon ground cinnamon

1 1/2 cups canned diced tomatoes

3/4 cup beef stock

1 tablespoon white sugar

1/2 cup raisins

1/4 cup chopped pimento-stuffed green olives

2 tablespoons apple cider vinegar

1 tablespoon capers, drained

1/3 cup slivered almonds, toasted

1 tablespoon lime juice



Heat the olive oil in a large skillet over medium heat. Add the ground beef and chorizo sausage. Cook and stir until no longer pink, about 10 minutes.

Drain off some of the grease, and stir in the onions and bell pepper. Cook until soft, then add the garlic. Season with cumin, chili powder, oregano, paprika, cayenne and cinnamon. Cook and stir for about one minute to release the fragrance. Pour the tomatoes and beef stock into the pan, along with the sugar. Set the heat to low, cover, and simmer for 20 to 30 minutes.

Stir the raisins, olives, capers and vinegar into the pan, and simmer uncovered for 5 minutes. Add the almonds and lime juice, and cook until they are heated, then serve.

Easy Mexican Casserole

This is an easy and very tasty dish. I often substitute ground turkey and low fat dairy products and it is still delicious! Serve with chips, salsa and green salad.


Original Recipe Yield 6 servings



500g lean ground beef

2 cups salsa

1 (410g) can chili beans, drained

3 cups tortilla chips, crushed

2 cups sour cream

100g sliced black olives, drained

1/2 cup chopped green onion

1/2 cup chopped fresh tomato

2 cups shredded Cheddar cheese



Preheat oven to 180 degrees C.

In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.

Spray a 200x300 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.

Bake in preheated oven for 30 minutes, or until hot and bubbly.

Cheeseburger Soup I 

I use sharp cheddar cheese because I like the taste but any cheddar is good.


Original Recipe Yield 6 to 8 servings



1/2 pound ground beef

3/4 cup chopped onion

3/4 cup shredded carrots

3/4 cup chopped celery

1 teaspoon dried basil

1 teaspoon dried parsley

4 tablespoons butter

3 cups chicken broth

4 cups cubed potatoes

1/4 cup all-purpose flour

2 cups cubed Cheddar cheese

1 1/2 cups milk

1/4 cup sour cream



In a large pot, melt 1 tablespoon butter or margarine over medium heat: cook and stir vegetables and beef , until beef is brown.

Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes.

Melt the remainder of butter and stir in flour. Add the milk, stirring until smooth.

Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil.

Original Recipe Yield 6 servings



1 quart water

4 carrots, sliced

2 small potatoes, peeled and diced

1 medium onion, diced

1 1/2 cups salsa, medium or hot

2 beef bouillon cubes

1 1/2 pounds ground beef

1/3 cup seasoned dry bread crumbs

1/3 cup milk

chopped fresh cilantro (optional)



In a large stock pot, bring water, carrots, potatoes, onion, salsa, and bouillon cubes to a boil. Reduce to a medium simmer, stirring occasionally, approximately 10 minutes.

Mix the beef, breadcrumbs, and milk together in a bowl. Form into 1-inch meatballs, and drop into boiling broth. Once soup returns to a boil, reduce heat to medium-low.

Cover and cook 20 minutes, or until meatballs are no longer pink in center and vegetables are tender. Serve with sprinkled cilantro for garnish.
